From a young age, Matteo was inspired by his family in Milan and captivated by the world of fine dining, exploring the most celebrated restaurants in Italy, France, and Spain. In 2015, he began his culinary journey with an apprenticeship at the Four Seasons Hotel in Milan. His talent and dedication soon led him to Prague, where he trained under the renowned chef Leonardo Di Clemente and was offered the position of junior sous chef. By 2019, Matteo had earned the title of chef de cuisine, and two years later, he took the helm of the kitchen at the Four Seasons in Prague, bringing his vision and passion to every dish.
We were fortunate to have the opportunity to create a place centered on the experience. Renovating this remarkable venue was a journey that honored its original spirit while also beginning a new story.
Every detail, every piece of furniture, every corner of the restaurant has a purpose. This is a venue that speaks to both body and soul — shaped by the craftsmanship that built it, yet truly brought to life by the people who are here today.
